Carrot cake
One of my favorite cooking activities on the boat is figuring out how to cook with what I already have. The challenge is increased by my weekly “family dinner” csa-type delivery because I never know what will be in the bag though I do know it will be exceptional whatever it is. Today I decided I wanted to make a carrot cake that was in the shape of a loaf and didn’t require a kitchen aid. I finally found a recipe but I only had half the flour, olive oil instead of vegetable oil, milk and lemon juice instead of buttermilk, lemon juice and powdered sugar instead of cream cheese....So in the end not sure if my concoction had any relation to the original recipe but I do know it tasted amazing.
It also looks as though it was enjoyed out of doors! Summer is coming.
