Dinner of Champions

PB&J and a nice glass of wine by candlelight. Does it get any better than that? It's been important to me to figure out how to cook on the boat. The challenges are stranger than you would think. You can use the oven or the stovetop. But not both at once. It's all manageable once you settle in. However it has made me appreciate the lovely simplicity on not making the meal an event. Just sitting down with Chris to catch up on our days is what its really all about.

  1. Here's my idea for healthy dining, quick and easy and boat friendly with no need of oven or stovetop. Breakfast: steel cut oats in the InstantPot; Lunch: potatoes (with saurkraut or other topping) made in microwave or InstantPot; Dinner: brown rice (InstantPot) with frozen veggies (microwave). Healthy, fast, cheap and fun! It's actually what I ate today--accept for the oats which I just ate raw. I learned that trick from my little sister!
